Chickpeas with rice, is a one-pot dish, which makes your routine more practical. I soak the chickpeas for at least 8 hours and cook in large quantities to freeze. Then use the already cooked chickpeas that were in the freezer. You can cook it on time without any problems. I love tomatoes, and I found the combination with chickpeas and rice to make this delicious vegan dish! I used thyme as an herb, but basil would be amazing too. It is an easy dish to make and will bring flavor and practicality to your routine. The tomato prepared the succulent chickpeas and rice, making this vegan dish please the whole family!
1 cup brown rice
1 cup cooked and sifted chickpeas
3 cups water
2 cloves garlic
1 tablespoon olive oil
1 teaspoon turmeric
2/3 teaspoon smoked paprika
thyme and salt
Sauté the onion in olive oil for about 5 minutes. Add the chopped garlic and sauté for another 3 minutes. Add the chopped tomatoes in small pieces and stir for 3 minutes.
Adjust salt and add saffron and paprika.
Add rice and water. Stir until incorporated and adjust salt. Cook until the liquid is reduced. When it is halfway through, add the chickpeas. At the end, finish with the thyme to taste.
