INGREDIENTS

¼ cup (tea) of coarse salt

2 teaspoons coriander seed

1 tablespoon of powdered ginger

PREPARATION MODE

In the pestle, beat the coriander seeds to crush them first – as it is more resistant, it is easier when mixing with the other ingredients.

Add coarse salt, powdered ginger and beat more to crush the salt and mix the flavors well. If you prefer, beat the ingredients in the blender’s pulsating mode.

Store in a glass jar with airtight closure for up to 3 months. Use to season grilled, roasted, fried or boiled fish.

5 other ways

1 – Various herbs

Add rosemary, bay leaves, basil, thyme and sage in a blender, add a drizzle of olive oil. After whipping, put the mixture on the fish and let it rest for 1 hour in the refrigerator before preparation.

2 – Whole fish

You will need 2 cloves of crushed garlic, 1 cup of dry white wine, 3 tablespoons of chopped green scent and 50ml of olive oil. Mix everything and then pass the mixture in and out of the fish. Let stand for 1 hour in the refrigerator before preparation.

3 – Fillets and slices

In this option we will make a broth of herbs. Put in a blender 1 bunch of fresh thyme, 1 parsley, 1 chopped garlic clove, 1 chopped onion, 1 pinch of paprika, black pepper, salt to taste and 200ml of olive oil. Beat everything and then pass the fish slices and fillets. Let stand for 1 hour in the refrigerator before preparation.

4 – Onions and garlic

The stars of this recipe are onion and garlic. Put in the blender 01 garlic clove, ½ onion, parsley and chives to taste, 5 basil leaves, juice of 2 lemons and black pepper powder to taste. Beat everything and then pass the fish. Let stand for 1 hour in the refrigerator before preparation.

5 – With pestle

Take onion, black pepper, rosemary, salt and thyme, all to taste. In a mortar and pestle, whisk together and then add olive oil. Beat everything and then pass the fish. Let stand for 1 hour in the refrigerator before preparation.
