1 and ½ cup (diced) diced carrots (250 g)

2 cups diced sweet potato (250 g)

1 tablespoon of olive oil (13 g)

Freshly ground salt and pepper

1 egg

1 cup of whole wheat flour (100 g)

1 pinch of grated nutmeg

1 pack of tomato paste (330 g)

Basil leaves

100 g buffalo mozzarella zero lactose

Who can resist a good gnocchi? This traditional Italian recipe made with potatoes can be even more tasty and nutritious! Made with sweet potatoes and carrots, this sweetest gnocchi is a great choice to vary the menu and make meals even more interesting. In addition, it has an organic tomato passata sauce and zero lactose buffalo mozzarella, making it an excellent option for a lighter accompaniment.

Preparation mode

On a baking sheet, arrange the cubes of carrots and sweet potatoes, drizzle with a drizzle of olive oil and season with salt and pepper.

Cover with aluminum foil and bake in a preheated oven (200˚C) until very soft (about 60 minutes).

Allow to cool and pass through the processor.

In a container, place the processed mixture and add the egg, wheat flour and nutmeg.

Mix well and then work the dough with your hands until it stops sticking.

If necessary, add more flour little by little.

Shape rolls and cut the gnocchi to the desired size.

Cook them in boiling water with a pinch of salt, placing small portions at a time.

When the gnocchi rises to the surface, remove with a slotted spoon.

Transfer to an ovenproof dish greased with olive oil, avoiding overlapping gnocchi. Reserve keeping warm.

For the sauce, just heat the passata.

Serve hot, garnished with basil leaves and buffalo mozzarella.
