Chickpea vegan nuggets recipe
Rich in proteins, potassium, phosphorus, calcium, zinc and magnesium, chickpea nuggets are considered a great ally to control cholesterol, the glycemic index, strengthen immunity, bones and teeth. This food is relatively simple to prepare, it can be added with various spices (pepper, parsley, chives, chimichurri, turmeric) and is great served with various sauces. Worth a try!
- 1 cup of chickpeas
- 1 large chopped onion
- ½ can of green corn
- 1 teaspoon of turmeric
- 4 crushed garlic cloves
- 1 chopped carrot
- 1 stalk of chopped leeks
- Salt and freshly ground black pepper
- Chopped parsley
- 2 ½ tablespoons of oatmeal
- 3 tablespoons of cornmeal to dust
To start, let the chickpeas soak for about 8 hours (to remove antinutrients and still speed up the cooking process). Then, transfer the beans to the pressure cooker, add new water, so that it is 4 fingers above the beans, add a little olive oil and salt to taste. Cover the pan and, when you get pressure, wait 15 minutes.
Then, pour the chickpeas into a colander and transfer it to the processor. Add ½ chopped onion, ½ can of green corn, ground pepper, a little olive oil, 1 teaspoon of turmeric and beat until everything is well crushed, forming a homogeneous mixture. Reserve.
In a non-stick frying pan, add a little olive oil, ½ chopped onion (in very small pieces) and sauté for 1 minute. Then add the crushed garlic and let it brown. Add the chopped carrots, the chopped leeks, salt, parsley and ground pepper to taste. Sauté for a few minutes. Turn off the heat, add the chickpea dough to the pan, add the oatmeal and mix well until smooth.
To finish, shape the nuggets by hand, pass them in the cornmeal (to form a crunchy crust) and take them to bake in the oven preheated to 180 ° C for 45 or 50 minutes. Another interesting tip is to freeze the nuggets overnight and then fry them in the airfryer at 200 ° C for about 15 minutes. It’s very tasty!
